Welcome To My Table
I love food. I enjoy every aspect of it, from growing ingredients and sourcing local meats to crafting recipes, setting the table, and creating a warm atmosphere. Each ingredient comes together to make a nourishing meal.
Throughout my life, I have experimented with food. I was a vegetarian and vegan for 25 years. Due to extremely low iron and ferritin levels post COVID-19 exposures, I re-embraced the nourishment of animal products. Now, my favorite animal products are grass-fed beef and butter, wild Alaskan salmon, and pasture raised eggs.
Another symptom I experience, and what many providers thought was related to low iron and ferritin, is constant dizziness. After years of multiple doctors and numerous tests, I am still searching for answers (with hope and prayer).
As I continue to search for answers, nutrition and lifestyle improvements have helped to lessen the severity of my symptoms. As a Nutritional Therapy Practitioner (NTP), I have embraced the importance of regularly fueling my body to maintain stable blood sugar, promote healthy gut bacteria (vagal nerve connection!), reduce stress, and increase sleep— all are pivotal for experiencing less vertigo, dizziness, and migraines. As a result, my passion is on neurological, autoimmune related concerns. For all of my autoimmune folks, I am also an Autoimmune Paleo (AIP) Certified Coach.
My philosophy as a certified Nutritional Therapy Practitioner (NTP) starts with attentively listening to your story— we all have a story and it’s time to be heard and listened to! I bring my skills as a former Board Certified Chaplain with a Masters Degree in Pastoral Care and Counseling into our interactions. Faith, spirituality, community, and connection have an intricate relationship on health and wellness.
Together, we focus on techniques to reduce daily stressors on the body with small, manageable additions or changes. I am passionate about providing nutrition and wellness education, resources, and recommendations with a holistic focus.
In our journey together, I look forward to sitting at a table with you. We will grow in friendship, trust, and health. This is a journey of many flavors— sweet, salty, savory—, moments of hot and cold, growth and expansion, stillness and active engagement. This is not a fast process (no fast food meals here), rather imagine this as a five course meal (dessert included) with each plate building on one another.
When not engaging with clients, you will find me with family or friends, homeschooling my children, cooking, reading, gardening, or being outside in nature. Nothing makes me happier than having a furry or fluffy critter at my heels with my kids close behind!
I look forward to meeting you!
In health & blessings,
Katie Erba, MA, NTP
